The large steppe-like expanses of the Causse Méjean limestone plateau, delineated by the Tarn and Jonte gorges, feed sizeable herds of sheep. This area, settled since prehistoric times, is punctuated by dolmens and menhirs. Caves and swallow holes make its sub-surface a treasure to be discovered. Vultures, extinct for several decades, now fly over the plateau again in search of food.
